SHEET-PAN SAUSAGES with PINEAPPLE


1 pineapple, peeled and cut into small wedges or chunks

1 large red onion, halved and sliced

6 pre-cooked sweet sausages, such as chicken and apple

2 tablespoons lime juice

1 tablespoon olive oil

1 tablespoon sugar

1 teaspoon chopped garlic

1 teaspoon soy sauce

1 teaspoon dijon mustard

1/2 teaspoon ground ginger

1/4 teaspoon red pepper flakes

zest from 1 lime

pinch of salt and pepper


Preheat oven to 425 degrees.


In a large bowl, combine the lime juice, olive oil, sugar, garlic, ginger, red pepper, zest, salt and pepper. Add the pineapple and the onion and toss well. Spread evenly on a sheet pan. Arrange the sausages evenly in the pan, and brush with the remaining marinade.


Roast for 15 minutes, and turn the sausages and pineapple mixture. Roast for 15 more minutes, or until caramelized and browned.


Remove sausages to a platter. Serve with the pineapple and onions on the side.


Makes 4-6 servings.
