GREEN CHILE RAJAS QUESADILLAS
In New Mexico during the chile harvest, the distinctive aroma of green chiles being roasted fill the air and awaken the taste buds! There is nothing quite like freshly roasted green chiles on a warm flour tortilla. Add some cheese for a quick and easy quesadilla.
1/4 cup fresh green New Mexico chile, roasted, peeled and seeded
2 large flour tortillas
1/2 cup shredded Mexican cheese
Tear the green chile into strips. Warm the tortillas on a comal or flat griddle flipping from side to side until hot. Place the green chile strips on one half of each tortilla. Sprinkle evenly with the cheese. Continue to cook over low heat until the cheese begins to melt. Carefully fold in half, and remove to a plate.
To serve, cut each tortilla into thirds.
Makes two quesadillas.
