MOROCCAN SPICED CARROTS


1 pound carrots

2 tablespoons olive oil

2 tablespoons fresh orange or lime juice

1 tablespoon honey

1/2 teaspoon each salt and pepper

1/2 teaspoon smoked paprika

1/4 teaspoon cumin

1/8 teaspoon cinnamon

1/4 cup chopped cilantro


Preheat oven to 450 degrees.


Cut carrots into sticks, about 3 inches long and 1/2 inch thick.


Combine the rest of the ingredients, except the cilantro, in a large bowl and mix well. Toss the carrots with the oil mixture. Sprinkle with cilantro and toss again.


Spread carrots evenly on a foil-lined baking sheet. Cover with foil and place in oven for 10-15 minutes, until carrots are tender. Remove the top sheet of foil and roast for 15-20 minutes, until carrots are caramelized and well browned.


Makes 4 servings
