Mom's Yummy Meatloaf



MOM’s YUMMY MEATLOAF


1 pound lean ground beef

1 cup old fashioned oatmeal, uncooked

1/2 cup finely chopped onion or scallions

1/2 cup finely chopped celery

1/2 cup grated carrot

1/4 cup finely chopped parsley

2 tablespoons finely chopped sage

1 tablespoon tomato paste

2 eggs

1/4 cup sour cream

1/2 cup barbecue sauce plus 1/4 cup additional

1 teaspoon salt

1/2 teaspoon ground pepper

Parsley for garnish


Preheat oven to 375 degrees.


Combine the beef, oatmeal, onions, celery, parsley, sage, tomato paste, eggs, sour cream, 1/2 cup barbecue sauce, salt and pepper. Place in a glass or ceramic loaf pan. Place pan in oven and bake for 30 minutes.


Remove pan from oven and increase temperature to 400 degrees.


Spread remaining barbecue sauce over top of loaf. Return to oven and bake for an additional 15-30 minutes, until sauce is caramelized. Remove from oven and allow to rest for 10 minutes before serving.


Remove from pan, and place on a board or serving platter. Garnish with parsley. Slice into servings. Delicious with mashed or roasted potatoes.
